Thanksgiving has passed and now that the holiday season is in full-swing, prepare yourself for more gatherings and even more food. Creamy dips, cheesy casseroles and homemade sweets will likely be on the menu, but what can guests with food allergies enjoy? Adults and children alike suffer from food allergies and this can lead to feeling left out of the festivities. Here are some helpful tips so both hosts and guests can enjoy this season’s eatings.

For hosts:

  • Offer alternatives. If guests want to contribute, suggest having them bring holiday napkins, utensils or beverages. This way you can limit the amount of food and be mindful of friends with food allergies.
  • Consider making a “natural” turkey. All-natural fresh turkeys are free of antibiotics, hormones and allergens. Some pre-basted turkeys may contain soy, wheat and dairy.
  • Avoid cross-contamination. When preparing food, care with utensils and surfaces is a must. Always scrub all utensils and surfaces with soap and water and wipe clean. Trace amounts of food can cause a reaction for highly allergic people.
  • Label your table. It’s always a good practice when hosting a gathering to label what you are serving, especially if a dish contains nuts or gluten.

 

For guests:

  • Offer to contribute. A polite guest always offers to bring something to the party. A bottle of wine is always a good option. When in doubt, fresh flowers or a festive centerpiece can always be a nice touch.
  • Bring a dish that’s safe. If you have food allergies and even if the party you’re invited to isn’t necessarily a potluck, still bring a dish or two that is safe to eat. This way your guaranteed there’s something you can eat and enjoy with everyone else.
  • Snack beforehand. Nervous about what’s going to be served? Have a light meal before the party and then lightly sample what the host has served. This way you won’t be famished during the party and you can still sample to your liking.
  • Bring medication. Have Benadryl and an EpiPen ready just in case you or someone you know starts exhibiting symptoms of an allergic reaction. Inform others as well on how to administer the medication if needed.

Following these tips will help you plan your menu or at least help organize your holiday game plan with some food allergy knowledge in mind. Just because food allergies exist doesn’t mean you or your friends can’t have a great holiday party.  Always remember to consult your physician if you are unsure if you are allergic to a particular food. Lemon recipes are fun, refreshing, and perfect for the springtime. If you’re a lover of lemons, you know that lemon desserts are simply irresistible. If the zingy flavor doesn’t pull you in, then the bright, beautiful color always does the trick. Give these lemon desserts a try after dinner this week.

Lemon Bars

Ingredients

1 cup all-purpose flour

1/2 cup butter, softened

1/4 cup confectioners’ sugar

Filling

2 large eggs

1 cup sugar

2 tablespoons all-purpose flour

1/2 teaspoon baking powder

2 tablespoons lemon juice

1 teaspoon grated lemon peel

Additional confectioners’ sugar

Lemon bars are always a delightful crowd favorite. Like most lemon recipes they are tangy and delicious with a chewy brownie-like consistency. Begin by combining ingredients to make the crust in a 8-inch baking pan. Then prepare the filling, and pour over the crust, baking for at least 25 minutes, or until golden brown. Cool on a wire rack, dust with confectioners’ sugar, cut into bars, and enjoy!

Lemon Drop Cookies

Ingredients

1/2 cup butter, softened

3/4 cup sugar

1 egg

1 tablespoon half-and-half cream

1 teaspoon grated lemon peel

1-1/2 cups all-purpose flour

1/2 cup finely crushed lemon drops

1 teaspoon baking powder

1/4 teaspoon salt

Take a light fluffy cookie, add a little bit of lemon, and you’ve got a refreshing, sugary treat. After combining all of the ingredients, and creaming them together, create balls with the dough. Bake 8 to 10 minutes, or until the edges are lightly browned and cool on a wire racks.

Lemonade Icebox Pie Recipe

Ingredients

1 package (8 ounces) cream cheese, softened

1 can (14 ounces) sweetened condensed milk

3/4 cup thawed lemonade concentrate

1 carton (8 ounces) frozen whipped topping, thawed

Yellow food coloring, optional

1 graham cracker crust (9 inches)

Enjoy a piece of creamy and smooth lemon pie. This pie’s lemon flavor is bold, and sure to become a new springtime favorite dessert. In a large bowl combine all ingredients until smooth, folding in the whipped topping if you desire. Pour over crust, cover, and refrigerate until set.

Appetizer: Mini Cheeseball Bites

For a classic appetizer that makes munching-while-mingling simple, consider these crowd-pleasing cheeseball bites. They’re like the standard cheese ball party fare, but instead of an awkward large lump that everyone shares, these offer individual portions that guests can eat in one bite.

8 ounces cream cheese, softened

3/4 cup white cheddar

3/4 cup dried fruit

1 1/2 cup mixed nuts, finely chopped

1 1/2 cup bacon crumbles

Medium-sized pretzel sticks

1 – 1 1/2 tablespoons italian seasoning

Beat together cream cheese, cheddar, fruit, and herbs until smooth. Form into balls and place on baking sheet to chill for at least 2 hours. Roll each ball into bacon, nuts, or both. Use the pretzel for a holding stick and enjoy!

The Main Course: Korean Meatballs
Spice up your holiday party with some spicy Korean-style Gochujang meatballs. These tasty treats are rolled into perfect bite-size balls so you’re able to pop them in your mouth with ease.

FOR THE MEATBALLS:

 

3 green onions, very thinly sliced

2 garlic cloves, minced

1 egg, lightly beaten

1 pound ground beef

1/2 cup panko breadcrumbs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon minced fresh ginger

1 teaspoon kosher salt

1/2 teaspoon ground white pepper

2 tablespoons canola oil, for pan-frying

FOR THE GLAZE:

1/3 cup apricot preserves

2 tablespoons gochujang (Korean chili paste)

1-1/2 tablespoons rice vinegar

1 tablespoon soy sauce

FOR THE GARNISH:

Sliced green onion

Toasted sesame seeds

Preheat oven to 350 degrees. In large bowl, combine all meatball ingredients except oil. Be careful not to overmix! Form into small meatballs and then brown them in batches in the oil in a large skillet. Transfer browned meatballs onto a baking pan and bake for 10 minutes.

In a small saucepan, combine all the glaze ingredients and then simmer for 5 minutes over medium, until mixture thickens. Before serving, brush meatballs with glaze and sprinkle with garnish. Spear with mini forks for portability.

Dessert: Strawberry Cheesecake Bites
No party is complete without a scrumptious dessert. These strawberry cheesecake bites are a unique spin on chocolate-dipped fruit and cheesecake. They only have a few steps and can be made the night before your event.

8 ounces cream cheese

1/2 cup confectioners sugar

2 teaspoons vanilla extract

12 large fresh strawberries, hulled

2 tablespoons graham cracker crumbs

2 (1 ounce) squares semisweet chocolate chips

1 teaspoon canola oil

Beat together cream cheese, sugar, and vanilla extract until smooth. Spoon mixture into a piping bag and fill hollowed strawberries with about 1 tablespoon. Dip exposed filling into the graham cracker crumbs. Melt the chocolate and oil in a bowl in 30-second intervals, stirring in between until warm and smooth. Dip the unfilled ends of the strawberries into melted chocolate and chill on a baking sheet until set.

However, these meals tend to have small nutritional value, and can lead to overall negative health effects on your children. Learn to make your own happy meals at home that leave everyone happy, satisfied, and healthy.

What is in the Traditional Kids Meal?

The traditional happy meal at McDonalds contains four chicken nuggets made from white meat, accompanied by fries and/or apple slices. The French fries and chicken nuggets are both deep fried in oil.

Homemade Happy Meals

The average happy meal has 420 to 520 calories and has 360 to 540 mg of sodium. These nutritional values vary depending on the fast food restaurant. The key to crafting your own healthier happy meal is to avoid frying these foods and be aware of the portions that you are serving.

How to Make Your Own Happy Meal

For your chicken nuggets use a bone-out chicken breast or thigh. Preheat the oven to 450 degrees Fahrenheit. Make sure to wash and clean it thoroughly, and cut it into nugget sized pieces. Then, dip the chicken pieces into plain yogurt or egg whites. Next prepare the crust for your nuggets.

Make your own meal!

Combine in equal portions nuts, whole wheat bread crumbs, parmesan cheese, and a hint of salt. Take the chicken breast and dip them into the mixture, making sure they are fully coated. Place your chicken breast on a greased baking sheet and cook for 40 minutes, making sure to flip the chicken pieces midway through.

For your fries you can use potatoes or sweet potatoes, depending on the preference of your kiddos. Slice the potatoes about a quarter of an inch thick and place them on a baking sheet. Choose a heart-healthy olive oil, being careful to only measure out two tablespoons before drizzling them on your potatoes.

Fries

Season your potatoes lightly with salt and pepper and bake at 400 degrees for about 45 minutes, or until nice and crispy.
