Spicy Lemon Garlic Shrimp

Ingredients

  • 2 pounds raw frozen shrimp, deveined, shells on
  • 2 sticks cold butter, cut into pieces

  • 1/2 teaspoon crushed red pepper
  • 4 cloves garlic, peeled
  • 1 whole lemon, juiced

If you love shrimp, you’re going to love the burst of lemon flavor in this recipe. Process the butter, parsley, salt, red pepper, garlic, and lemon. Sprinkle over the shrimp, and then bake the shrimp until it is opaque. Finally, serve with hot, crusty bread.

Lemon and Oregano Chicken

Ingredients

  • One 4- to 4 1/2-pound chicken, cut into 10 pieces
  • Kosher salt and ground black pepper
  • 2 tablespoons olive oil
  • 3 shallots, cut into 1-inch-thick pieces through the stem
  • 2 cloves garlic, smashed and roughly chopped
  • 2 medium leeks, white part only, sliced into 1 1/2-inch rounds and rinsed
  • One 14-ounce can whole artichoke hearts in water, drained
  • 5 tablespoons fresh oregano leaves
  • 3 tablespoons unsalted butter, cut into pieces
  • 1/3 cup dry white wine
  • 1 1/2 cups chicken broth or stock
  • 1/2 lemon, thinly sliced into rounds

Begin by browning the chicken on both sides, in the pan. Remove the chicken and heat the remaining ingredients until softened. Put the chicken back into the pan, and transfer the pan to the oven to continue baking. Garnish with oregano before serving.

Sauteed Green Beans with Lemon and Blue Cheese

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 8 ounces green beans, trimmed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sriracha or other hot sauce
  • Fresh lemon juice, as needed
  • 2 ounces crumbled blue cheese

Add the green beans to butter and oil, stirring until they begin to color. Next, add in the worcestershire, sriracha, and lemon juice. Continue cooking until crisp and tender. Finally, top with crumbled blue cheese before serving.

Classic Carrot Cake with Fluffy Cream Cheese Frosting

This carrot cake recipe is tasty, but thankfully, not too sweet. The total prep and baking time for this cake is 3 hours and 30 minutes. However, this moist double decker cake absolutely worth the wait!

Ingredients

Cake

  • 1 cup pecans (4 ounces)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 1/2 tsp pure vanilla extract
  • 4 large eggs
  • 2 cups sugar
  • 1 pound carrots, peeled and coarsely shredded

Frosting

  • 2 sticks unsalted butter, softened
  • Two 8-ounce packages cream cheese, softened

Nutmeg-Banana-Carrot Muffins with Chocolate Ganache

The unrefined sugar in this recipe makes it a healthier breakfast pastry option. There is some overnight prep involved to make the syrup, but once this is complete, it takes less than a minute to incorporate into the recipe.

Oatmeal-Carrot Cookies with Cream Cheese Frosting

This recipe takes the classic carrot cake, and puts it in cookie form. You’ll love the thick and chewy consistency, filled with oats, raisins, and walnuts. For extra fun, put the icing in a piping bag, and let the kids decorate the cookies.

Berry Cantaloupe Salad

Ingredients

1/2 cantaloupe, scooped with melon baller

1 cup strawberries, thinly sliced

1 cup blueberries

1 tablespoon freshly squeezed lime juice

1/2 teaspoon lime zest

2 teaspoons chopped mint leaves

This salad is easy to make, and the hint of mint makes it extremely refreshing. Be sure to use the freshest fruit possible. In a large bowl combine all fruits, lime zest, and mint. Be sure to refrigerate for at least 30 minutes.

Caesar Pasta Salad

1 cup mayonnaise

1/3 cup sour cream

1 clove large garlic (pressed)

2 tablespoons lemon juice

2 anchovies finely minced

1 teaspoon sauce

1 pound penne pasta cooked until al dente and rinsed with cool water

6 leaves large Romaine lettuce thinly sliced

1 1/2 cups grape tomatoes

4 green onions (green parts sliced)

1/2 cup finely shredded Parmesan cheese

1/2 teaspoon ground black pepper

2 grilled chicken breasts (diced)

1 1/2 cups croutons

Begin by mixing together lemon, sour cream, mayonnaise, garlic and Worcestershire sauce. Then add all remaining ingredients. Finally toss the salad, and refrigerate for at least 30 minutes.

Blueberry Brownies

5 ounces bittersweet chocolate, finely chopped

6 tablespoons unsalted butter

2 large eggs

1 cup granulated sugar

1 teaspoon pure vanilla extract

3/4 cup plus 2 tablespoons all-purpose flour, divided into 3/4 cup and 2 tablespoon portions

1/2 teaspoon kosher salt

1 1/2 cups fresh blueberries, divided into 1 cup and 1/2 cup portions

These brownies are picnic approved, with blueberries in the batter, as well as pressed on top. The key to making this recipe is not to overmix your ingredients. Follow the instructions carefully, to avoid your brownies becoming dense.

Pasta and spring vegetables go hand in hand. Try these two pasta recipes filled with the freshest spring veggies. Whether you want to try something hot, or cold, we know you’ll enjoy these hearty pasta dishes.

Farfalle with Spring Vegetables

Ingredients

2 slices of white sandwich bread, finely chopped (1 cup)

1/2 cup plus 2 tablespoons extra-virgin olive oil

2 tablespoons chopped flat-leaf parsley

2 tablespoons snipped chives

1 tablespoon chopped tarragon

Salt and freshly ground pepper

1 bunch broccolini

1 pound farfalle

4 tablespoons unsalted butter

1 garlic clove, minced

1 fennel bulb—halved, cored and thinly sliced

2 scallions, thinly sliced

1 cup frozen peas, thawed, or 1 pound fresh peas, shelled

1 tablespoon fresh lemon juice

The key to this recipe is cooking all the vegetables on moderate heat until they are crisp and tender. On average this normally takes about 5 minutes. The herbs and seasonings are also very important, for a balanced overall flavor. This recipe takes about 45 minutes to make and serves 4.

Pasta Salad with Grilled Vegetables, Parsley and Feta

Ingredients

3/4 pound orecchiette

1/2 pound thin asparagus

1 medium zucchini, sliced lengthwise 1/4 inch thick

1/2 small eggplant, sliced lengthwise 1/2 inch thick

7 tablespoons extra-virgin olive oil

Kosher salt

Freshly ground pepper

2 1/2 tablespoons fresh lemon juice

1 small shallot, finely chopped

4 ounces French feta cheese (3/4 cup), crumbled

1 cup parsley leaves, coarsely chopped

1/3 cup pitted kalamata olives, coarsely chopped

This recipe is filled with luscious vegetables including asparagus, zucchini, and eggplant. Make sure to grill them on moderately high heat as you want them slightly charred for the best taste possible. Once grilled, cut up the vegetables and add them to the pasta along with the feta cheese.  This recipe takes about 25 minutes to make and serves 8.

Now that spring is here it’s time to incorporate in-season vegetables into your meals. These include veggies such as asparagus, artichoke, and snap peas. Obviously you can purchase these vegetables frozen, but enjoying them fresh at the peak of their season is what is most ideal, and delicious.

Linguine With Asparagus and Pine Nuts

12 ounces linguine (3/4 box)

1/4 cup olive oil

1/4 cup pine nuts

4 cloves garlic, sliced

2 pounds asparagus, trimmed and cut into 1-inch pieces

kosher salt and black pepper

1 cup shaved Parmesan (about 3 ounces)

Cook your favorite pasta according to the box instructions, drain, and return to the pot. Toast the nuts and garlic on medium heat over the stove adding the asparagus last and cooking for 2 to 3 more minutes, or until tender.  Add the asparagus mixture to the pasta, and stir well.

Baked Stuffed Artichokes With Pecorino

4 ounces baguette or country bread, torn into large pieces

1/2 cup grated pecorino (2 ounces)

2 tablespoons olive oil, plus more for brushing artichoke leaves

2 tablespoons chopped fresh chives, plus more for serving

kosher salt and black pepper

2 artichokes

vinaigrette (optional)

Combine the ingredients together, and then peel the stems of the artichoke. Be sure to scoop out any discard or choke in the artichoke before brushing with oil, and filling with the bread crumb mixture. Bake 45 to 60 minutes until tender tender and golden.

One-Pot Salmon With Snap Peas and Rice

1 cup long-grain white rice

1pound salmon fillet, skin removed

kosher salt and pepper

4ounces sugar snap peas, trimmed

1/3 cup low-sodium soy sauce

4 scallions, trimmed and sliced

2 tablespoons rice vinegar

1 tablespoon grated ginger

1 tablespoon dark brown sugar

Cook rice and salmon on stovetop separately. Add the salmon on top of the rice and continue cooking while adding the snap peas. Mix together the remaining ingredients in a bowl, and spoon on top of salmon, peas and rice.

Teriyaki Salmon

A classic adaptation of the Japanese cooking method, this recipe is simple enough to do on short notice and time restrictions, that is, if you have all the ingredients in your pantry. The most unlikely ingredient is sake; however, you can always substitute the store bought kind.

The saltiness of the teriyaki begs for a bitter counterpart like asparagus with sesame seeds or a refreshing cucumber salad with ginger.

Lemon Sole with Chipotle Chili Recado

This is a perfect  dish for those looking for a bit more spice without being overwhelming.

While this plate calls for sole, you could substitute another thin, flaky fish like tilapia; however, most seafood markets should be able to oblige. Grilling this fish will add that nice char contrast with a spicy sauce, while the lemon adds depth with bright acidity.

It’s a perfect dish to be enjoyed outside in the sunshine but is versatile enough to make all year, even if there’s snow on the ground.

Tuscan Grilled Trout

Garlic and herbs are what differentiates this option. The vinegary baste/sauce adds a briney quality that elevates this dish beyond its simplicity. If you’re entertaining, your guests will think you spent hours cooking, making this an excellent way to get some well-earned compliments. Just kidding, but seriously.

To balance out the herbal notes, you might try pairing this with a creamy lemon risotto rather than a heavier pasta. And don’t forget the wine! Don’t overthink it: make sure it’s white and served chilled.

Orange Roast Sea Bass

Roasting this fish removes any pressure associated with grilling or in the pan. Just make sure you get the oven at the right temperature and don’t overcook it. If sea bass isn’t available, you can another thick, meaty fish like cod.

Full of flavor and health-boosting vitamins and nutrients, mushrooms add unique flavor to beef, chicken, or vegetarian dishes. With a multitude of different types available, such as Portobello or Baby Bella, you can be sure to find a mushroom you love.

Though they boast different names and flavors, most mushrooms we eat belong to the same family, called Agaricus bisporus, which includes both white and brown mushrooms. Age is what gives each type of mushroom its distinct flavor.

Cremini mushrooms are a more mature version of a white button mushroom. They are firmer and have a more robust flavor. They also host many nutrients, including potassium and the trace element selenium. Selenium has powerful antioxidant effects that can benefit heart health, reduce risk of chronic diseases, and help with the function of your thyroid and immune system.

Shiitake mushrooms have been used in Chinese medicine for over 6,000 years. More recently, Western cultures have begun to enjoy them for their rich and smoky flavor. They are considered to be a very good non-animal source of iron.

Portobello mushrooms are one of the more mature types of mushrooms. They have a tougher texture than other mushrooms, which encourages many to use them as a replacement for meat in burgers and sandwiches.

Whatever type you prefer, there are plenty of amazing recipes you can make. Here are three that we find particularly delectable.

Skinny Mushroom Stroganoff

From Skinnytaste, this light and delicious take on a classic dish uses three different types of mushrooms—Cremini, Bella, and Shiitake—each of which delivers a host of nutrients, including B vitamins, selenium, and copper. This version lightens it up with vegetable broth and reduced-fat sour cream.

1 tbsp butter

1/2 cup chopped onion

2 tbsp unbleached all-purpose flour

2 cups fat-free, less-sodium vegetable or beef broth

1 tbsp  Worcestershire sauce

1 t tomato paste

5 oz sliced Cremini mushrooms

8 oz sliced baby Bella mushrooms

3.5 oz Shiitake mushrooms

1/4 t thyme

salt and pepper to taste

2 tbsp  white wine or sherry

1/4 cup reduced-fat sour cream

8 oz uncooked noodles (No-Yolk noodles)

1 tbsp minced fresh flat-leaf parsley for garnish

Cook the noodles in salted water while heating a large, nonstick skillet. Cook onions in butter for 2-3 minutes. Add flour, stir for 30 seconds, and then gradually add broth, Worcestershire sauce, and tomato paste, stirring continuously. Add mushrooms, thyme, salt, and pepper. Cook 4-5 minutes until thickened; add wine and simmer for 4 minutes. Remove from heat, let stand 30 seconds, then add the sour cream. Serve immediately over noodles.

Grilled Portobello Mushrooms With Tomatoes and Fresh Mozzarella

This dish from Food Network twists a traditional favorite, bruschetta, into something healthy and delicious.

3 tbsp  olive oil, plus extra for greasing grill pan

4 large portobello mushrooms (about 5 inches in diameter), stemmed

Salt and freshly ground black pepper

3 tbsp extra-virgin olive oil, plus extra for drizzling

2 cloves garlic, minced

3 small to medium sized vine ripened tomatoes, cut into 1/2-inch pieces

8 ounces fresh water-packed mozzarella, drained, cut into 1/2-inch cubes

1/4 cup chopped fresh basil leaves

Drizzle mushrooms with olive oil and then sprinkle with salt and pepper. Add a bit of olive oil to the grill pan to prevent sticking. Grill until mushrooms are tender, about 5 minutes each side. Whisk the extra-virgin olive oil with the garlic. Add tomatoes, cheese, and basil and toss. Season to taste with salt and pepper. Spoon the mixture onto the mushrooms and serve.

Winter Squash Risotto

This recipe from Eating Well will warm you up on a cold winter day.

5 cups reduced-sodium chicken broth, or vegetable broth

2 tbsp extra-virgin olive oil

3 medium shallots, thinly sliced

3 cups chopped peeled butternut, hubbard, red kuri or kabocha squash ( ½-inch pieces)

2 cups shiitake mushroom caps, thinly sliced

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp freshly ground pepper

1/8 tsp crumbled saffron threads (optional)

1 cup arborio rice

1/2 cup dry white wine, or dry vermouth

1/2 cup finely grated Parmigiano-Reggiano cheese

Bring broth to simmer and then reduce the heat so it is steaming but not simmering. Cook shallots in oil and stir in squash and mushrooms; cook for about 5 minutes. Add thyme, salt, pepper, and saffron, if using. Cook for 30 seconds. Add rice and stir about 1 minute. Add wine and cook another minute. Stir in 1/2 cup of the hot broth and simmer until liquid is absorbed. Continue adding broth and repeating the process until the rice is tender and creamy, about 30 to 40 minutes total. Remove from heat and stir in cheese.

  • 1 small zucchini, sliced into 1/4-inch rounds
  • 1 small summer squash, sliced into 1/4-inch rounds
  • 1/2 a small red onion, thinly sliced

  • 1/4 cup pistachios

On the day of the big game, we get together to watch football and have fun, but we also gather for another important reason: eating delicious food. Typical fare for Super Bowl parties includes crowd-pleasers such as wings, pizza, burgers, and nachos. Those things are popular for a reason–they’re delicious–but we’re offering ideas to put your own twist on traditional Super Bowl recipes. Make your mark and wow your guests with these 3 spins on classic favorites.

Buffalo Chicken Cheese Balls

Wings can get messy when you’re mingling at a party, so these fried Buffalo Chicken Cheese Balls are a great way to bring the flavor without sticky fingers.

Super Bowl Recipes - Chicken Cheese Balls

1 store-bought rotisserie chicken

1/4 cup hot sauce (recommended: Frank’s Red Hot)

1 teaspoon ground black pepper

1 3/4 cups sharp Cheddar

1/4 cup freshly sliced scallions

1 cups all-purpose flour

3 eggs, lightly beaten

2 cups panko bread crumbs

Vegetable oil, for frying

Blue Cheese Dip:

1 1/2 cups mayonnaise

1/2 cup packed blue cheese, broken up

1/2 teaspoon hot sauce

2 teaspoons Worcestershire sauce

1 teaspoon salt

1/2 lemon, juiced

1 teaspoon chopped garlic

Shred chicken and place in a large bowl, then add the hot sauce, pepper, cheese, and scallions, tossing to combine. Roll into golf ball-sized balls. Dip each ball into flour, then the eggs, and then the breadcrumbs. Fry in 350 degree oil for 2 minutes and drain on paper towel-lined plate. Serve with sauce and enjoy!

Super Bowl Recipes - Cheese Dip

1/2 cup mayonnaise

One 8-ounce package cream cheese, softened

1 cup grated sharp Cheddar cheese

1/2 cup grated Monterey Jack cheese

2 green onions, finely chopped

1 dash cayenne pepper

8 butter crackers, crushed, such as Ritz

8 slices bacon, cooked and crumbled

Corn chips, crackers or bagel chips, for serving

Mix cheeses, onions, and pepper. Bake in a shallow baking dish for 15 minutes at 350 degrees. Top with bacon and serve with chips.

Touchdown Cookies

Every decent party needs a delicious dessert. These Touchdown Cookies are a great way to end the fun-filled day.

Super Bowl Recipes - Touchdow Cookies

1 cup butter, softened

1 cup sugar

2 eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

GLAZE:

2 cups confectioners’ sugar

4 to 5 tablespoons hot water

3 to 4 teaspoons baking cocoa

Cream butter and sugar until fluffy. Add eggs and beat well after each addition. Beat in vanilla. Combine dry ingredients and then incorporate slowly into wet. Cover and refrigerate at least 3 hours. Roll out dough on a lightly-floured surface and cut with a football-shaped cookie cutter. Bake at 350 degrees for 8-10 minutes or until lightly browned.
For the icing, mix sugar and hot water until desired consistency. Set aside 3 tablespoons. Add cocoa to remaining glaze and spread on cookies. Pipe white glaze on cookies to form football laces.
