This St. Patrick’s Day, get a little green! Try these fun recipes that will make your food extra lucky this year. Thanks to Taste of Home, you can entice your family with meals that will make the holiday even more fun. The best part? Each recipe has a prep time of under 20 minutes!

Green Eggs and Ham Sandwiches

Ingredients

4 eggs

1/4 cup fat-free milk

3 tablespoons prepared pesto

4 whole wheat English muffins, split and toasted

2 slices deli ham, halved

4 slices reduced-fat provolone cheese

Take the traditional breakfast sandwich and give it some extra flavor. This recipe is given a green flair by the pesto. It may seem like a strange combination, but it will give your morning sandwich the perfect St. Patty’s kick.

Party Spinach Spread

Ingredients

1 package (10 ounces) frozen chopped spinach, about 2/3 cup

1/3 cup fresh parsley, stems trimmed and discarded

2 tablespoons chopped onion

1 teaspoon salt

1 teaspoon ground black pepper

1/2 cup mayonnaise

This recipe is simple, with the main ingredient including frozen spinach. Make sure it is thawed and drained properly before adding the additional ingredients. Serve this with wheat crackers, butter crackers, or celery.

Pistachio Pudding Cake

Ingredients

1 package yellow cake mix (regular size)

1 package (3.4 ounces) instant pistachio pudding mix

4 large eggs

1 cup club soda

1/2 cup canola oil

1/2 cup chopped walnuts

Icing

1 cup cold heavy whipping cream

3/4 cup cold 2% milk

1 package (3.4 ounces) instant pistachio pudding mix

2 teaspoons confectioners’ sugar

1/2 cup chopped walnuts

Pistachios in a cake? Why, yes indeed! The flavor from the pudding is not overpowering and it is complimented by the yellow cake mix. Make sure the cake is completely cool before frosting. For a crunchy touch, sprinkle walnuts on top. Refrigerate until you serve.

Sleeping is a pivotal part of child development and health. Children not getting enough sleep has been scientifically linked to a plethora of health issues including obesity and cognitive functioning. Although bedtime may seem negotiable, especially when a cute dimpled face is asking for one more story, it is important to remember the larger picture. Take a look at the effects of lack of sleep, along with the suggested bedtimes and amount of sleep your children should be receiving.

Preventing Obesity

The bedtime of children is linked to obesity in the United States. Children who go to bed as toddlers before 8 p.m. were found to be much less likely to be obese in their teenage years.

How are these factors connected? Well, if your child does not get enough sleep, this will affect their hormones and the changes that take place within them. These hormones control both appetite and metabolism. In addition, staying up later leaves more time for snacking, and viewing commercials that encourage your child to snack.

Cognitive Development

Getting a good night’s rest has a positive effect on your child’s brain. Having an early bedtime will improve your child’s mood and mental health.

Because they are resting the full amount that they should, they experience restorative sleep, which is important for the brain to repair and recover for the next day. Without enough sleep, emotional regulation, is impaired. This is why without enough sleep your child may be overly grumpy, or sad. Sleep deprivation can start a negative cycle that can lead to stress.

Your Child’s Needs

According to the American Academy of Sleep Medicine it is recommended that babies from 4 to 14 months should get 12 to 16 hours of sleep. Children 1 to 2 years old should get 11 to 14 hours of sleep.

Children 3 to 5 years old should get 10 to 13 hours of sleep. Children 6 to 12 years old should get nine to 12 hours of sleep. Finally, teengers, from 13 years old to 18 years old should get around eight to 10 hours of sleep. Toddlers should be in bed around 7:30 p.m., young children by 8 p.m., preeteens by 8:30 p.m., and teenagers between 9 and 10:30 p.m.

Come out this weekend and support America’s heroes. The 2016 USA Heroes Run Tribute is a night trail run with 5K, 10K, and 25K courses. There is also a Little Heroes 1 Mile Run. The Event will take place Saturday, May 28th at 7:00 p.m. at Resaca de la Palma State Park in Brownsville, Texas. All runners who complete the race with receive a custom USA Tribute Night Trail Run finisher medal. Register to run here. Neighbors Emergency Center will be providing bug patches to participants prior to the race. This event is free and will take place at Fair Park in Harlingen. KidFit educates and promotes a safe and healthy lifestyle for all the children in our community. It’s almost that time of year again! Grab your bike and join us for the 2016 BP MS150. The BP MS 150 will take place April 16 and 17th with routes varying between 160-180 miles from Houston to Austin. The ride begins Saturday Morning with breakpoints located every 8 to 15 miles.

The BP MS150 is a fundraising bike ride organized by the National Multiple Sclerosis Society. Multiple sclerosis is an immune-mediated process in which an abnormal response of the body’s immune system is directed against the central nervous system made up of the brain, spinal cord, and optic nerves. This event is the largest Bike MS event in the United States. With over 13,000 riders and 3,500 volunteers the MS150 has become an amazing fundraising engine for MS. The 2015 BP MS broke records by raising 20.3 million dollars in support of the mission to end MS.

Day one of the race concludes at the Fayette County Fairgrounds in La Grange. You can enjoy the overnight and Camp St. Mark’s locations in La Grange. Day two of the race concludes in downtown Austin with exciting Finish Line festivities. This event is an extraordinary experience based on the comradery of coming together. The same teams come back year after year to participate because of the lasting bonds that are created.

As part of our ongoing commitment to be the Best Neighbors Ever, Neighbors Emergency Center will be participating in the BP MS 150 on April 18-19, 2015. Organized by the National Multiple Sclerosis Society, the BP MS 150 is a two-day fundraising event with a 180 mile bike ride from Houston to Austin.

Riders will begin the trek early Saturday morning, converging from multiple spots across Houston to ride to the halfway point. There will be a much-needed stop in La Grange overnight. On Sunday, cyclists will cross the finish line in front of the Texas State Capitol and the Bob Bullock Texas State History Museum at 18th Street and Congress.

Meet The Team

Our staff rose to the challenge, forming a team of 28 people including non-riders who will be there to offer support. The Neighbors Emergency BP MS 150 riding team includes a mix of staff and friends and family of staff. Among those participating are Dr. Lee Chilton, Dr. Dharmesh Patel, Chief Nursing Officer Lauren Cotton, Dr. Amina Shaikh, Dr. Ahmed Shaikh, Tricia Todd, Faheem Williams, and many more. Dr. Cyril Gillman and Brittany Sanders will serve as the team captains.

To prepare for the MS 150, many of our team members are taking advantage of training rides around the Houston and Austin area. Though a few members have several years experience with this particular ride, many on the team are first-time participants. The ride is a difficult one that will require endurance, but we are eager to accept the challenge to help benefit our community.

Why Best Neighbors Ever?

Our team name was inspired by one of our taglines, Best Neighbors Ever. As we strive to be trusted neighbors to whom others can turn in times of need, we feel that this embodies the values for which our company stands. Taking part in this race allows us to make a difference and be the Neighbors that our communities need.

The purpose of the event is to raise money for multiple sclerosis research. The local community can help by donating money to the National MS Society on behalf of our team. Any donations are welcome and will help us reach our fundraising requirement.

So you want to train to run a long-distance race? That’s fantastic, but like any form of exercise, long-distance race running is a sport that requires discipline and training. Whether you are new to running or just new to racing, we have tips that can help you reach your goals.

Getting Started: Setting Goals

The most important thing you can do to get started is to set your goal and stick to it. Visualize where you will be at the end and map out a reasonable timeline that will work for you. Your goals motivate you to train, so keep them in mind over the course of the training period.

Running is a physical sport, but it requires mental endurance as well. Pay attention to the demands of your body and listen. Don’t be afraid to start slow until you get used to the physical demands. Employ proper breathing techniques and posture.

Involve your brain in the process by developing a plan that works for you. Listen to the right music to get you into the zone. Stretching is an important element of any training plan, so be sure to strike a proper balance between strengthening and stretching.

Eat for Success

Training includes fueling your body for maximum performance, and it starts long before the race. A diet based on a proper balance of good protein like chicken breasts, healthy fats like avocado or olive oil, and smart carbs like sweet potatoes, brown rice, and quinoa is the way to go.

Of course, fruit and veggies are important, and your body will likely start craving them with the increased physical demands you put on your body.

Gearing Up for the Big Day

There are a few key things you can do over the course of your training to make sure you will succeed on the day of the actual run.

  • Don’t skip practice runs
  • Train during the time of day that you’ll actually be running
  • Cross-train with other forms of exercise to give your muscles a rest
  • Find support with a running buddy who will keep you accountable
  • Plan your hydration plan – get about 6-10 ounces for every 2-3 miles
  • Get plenty of sleep

Most importantly, give yourself a pat on the back for committing to this endeavor. It’s not easy, but you should be proud for having a goal and sticking to it.

Glenn York Elementary PTO Carnival

On Saturday, February 28, Neighbors will attend the Glenn York Elementary PTO Carnival in Pearland, TX. We will be there from 12 p.m. to 4 p.m. and will be have lots of giveaways at our table. Horn Academy Gala

On Saturday, February 28, Neighbors will also attend the Horn Academy Gala. The gala will be start at 7 p.m. and the theme is “Rock the Red Carpet”.
